To make Corn Muffins,First grease a standard 12 muffin tin with Butter,and Preheat the oven to 425° F.When you are almost done with the batter put the greased tin in the oven until the butter is brown
Whisk together in a large bowl,1 1/4 cups of yellow or white cornmeal,3/4 cup all purpose flour,2 1/2 teaspoons of baking powder,1-4 tablespoons of sugar (I used 2), and 3/4 teaspoon of salt.
Add in 1 or 2 beaten eggs(I used 2),2-3 tablespoons of melted butter or vegetable oil,and 1 cup of milk.
Do not be concerned if it is liquidy it is fine.
Stir it together and take out the hot pan with brown butter,bake the muffins for about 15 -18 minutes.If it is more liquidy then to 15 or 16,if it’s more firm and has more of a body the do 17 or 18.
