
This is a Joy of cooking recipe that me and my family make every year for Christmas and I didn’t know what to make so I made these.They were a long process but we’re delicious in the end.
First grease a cookie sheet or tray
Now preheat the oven to 350° F
Now whisk together,1 3/4 cups of all purpose flour,3/4 teaspoon baking powder,1/4 teaspoon baking soda,1 pinch of salt,2 1/2 teaspoons of ground ginger,1 teaspoon of ground cinnamon,and 1/8 or half of 1/4 of a teaspoon of ground cloves
In a mixer mix together 6 tablespoons (3/4 a stick) of butter, softened,and 3/4 cups of sugar
Add in one at a time mixing in between,1 egg,1/4 cup molasses,1 teaspoon of lemon zest,and 1 teaspoon fresh lemon zest
Stir in the dry ingredients with the wet ingredients until mixed,Form the dough into small evenly sizes balls coat in a thin layer of sugar, place on the cookie sheet and flatten down slightly and gently
bake them for about 12 minutes ( if you want them to be more crunchy overbake slightly, if you want them more tender do nothing)
They will flatten out and will become more stuff and crunchy as they are left out of the oven.
